- 1 c. heavy cream
- 10 oz. semi-sweet or bittersweet chocolate, chopped (2 c.)
Directions

1Gently warm the cream in a small saucepan over medium heat until small bubbles begin to appear at the edges.

2Remove from heat.

3Stir in chocolate until mixture is smooth and the chocolate has melted completely.

4Do not stir so vigorously that bubbles form.

5If there are any visible lumps, strain the mixture through a fine mesh sieve.
