Chocolate Icing

Ingredients

  • 3 c. sugar
  • 1 can evaporated milk (large can)
  • 15 large marshmallows
  • 1 (12 oz.) pkg. semi-sweet chocolate chips
  • 1/2 c. (1 stick) margarine, softened
  • 1 c. chopped pecans

Directions

    Cook the sugar, evaporated milk and marshmallows on high heat for approximately 6 minutes or until marshmallows have melted. This mixture will cook up to the top of your pot, so you must stir constantly.

    Once the mixture comes to a full boil, reduce heat to medium.

    Add 1 large package of semi-sweet chocolate chips and 1 stick of butter.

    Keep this over medium heat until chocolate and butter have melted.

    Remove from heat and mix with electric mixer until smooth and creamy.

    Add chopped pecans.

    Spread on cake layer(s) immediately.

    Hardens quickly (like fudge).
