- 1 pkg. chocolate mint cookies
- 1 pkg. gelatin
- 1 c. milk
- 3 eggs, separated
- 1 c. sugar
- 1/2 tsp. salt
- 1 tsp. vanilla
- 1 pt. whipping cream
- green food coloring
Directions

1Put cookies through food chopper.

2Pack crumbs into 9-inch spring-form pan.

3Keep some for topping.

4Soak gelatin in milk for 1 hour.

5Beat egg yolks, sugar and salt in top of double boiler. Add gelatin and cook until thick (5 to 7 minutes); cool thoroughly. Beat egg whites stiff.

6Whip cream with vanilla and few drops food coloring.

7Fold egg yolks mixed with egg whites and whipped cream. Pour into pan; put crumbs on top.

8Refrigerate overnight.
