- 4 cloves garlic, minced
- 6 Italian tomatoes, seeded, peeled and quartered or 1 (16 oz.) can Italian tomatoes
- 1/4 c. fresh basil, chopped coarsely
- 1/4 to 1/2 c. wine (red or white)
- 6 to 9 oz. fresh pasta (linguine or angel hair)
- 1 to 2 Tbsp. olive oil
- freshly grated Parmesan or Romano cheese
Directions

1Saute garlic and tomato in olive oil over medium heat unti tender.

2Add wine and simmer until reduced slightly (5 to 10 minutes).

3Add basil; stir and remove from heat.

4Spoon over cooked pasta, then sprinkle cheese on top to taste.

5Salt and pepper to taste.
