Chocolate Mousse

  • 12 oz. semi-sweet chocolate chips
  • 4 tsp. water
  • 4 tsp. sugar
  • 6 eggs
  • 1/2 tsp. salt
  • 1 1/2 tsp. almond extract
  • 2 1/2 tsp. vanilla
  • 1 pt. heavy cream

Directions

    Put first 3 ingredients in top of double boiler or microwave for 1 minute.

    Melt and stir.

    Separate eggs and beat whites until stiff; set aside.

    Beat yolks; add salt, almond extract and vanilla.

    Stir again.

    Whip heavy cream until stiff; set aside. Blend everything to egg yolks.

    Add everything to egg whites.

    Add chocolate, egg whites and heavy cream.

    Fold carefully.

    Pour into another serving bowl.

    Refrigerate 6 hours.
