  • 1 3/4 cup gluten free all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tbsp cocoa powder
  • 6 tbsp stevia
  • 1 cup almond or soy milk
  • 1/3 cup plus 2 teaspoons grapeseed oil
  • 1 egg
  • 1 tsp pure vanilla extract
  • 3/4 cup semisweet chocolate chips

    Preheat the oven to 400F.

    Put the flour, baking powder, baking soda, cocoa, stevia, and 3/4 cup of the chocolate chips into a large bowl and mix

    Pour all the liquid ingredients into a measuring jug and mix

    Now mix and dry and wet ingredients together
  5. 5
    Spoon into the prepared muffin cases and then bake for 20 minutes or until the muffins are dark, risen and springy.
