Chocolate Oatmeal Pie

  • 2 eggs
  • 1 c. C&H granulated sugar
  • 1/4 tsp. salt
  • 1 c. light corn syrup
  • 2 Tbsp. butter or margarine, melted
  • 1 tsp. vanilla
  • 1/2 c. each flaked coconut, quick cooking oats and semi-sweet chocolate chips
  • 1 unbaked 9-inch pastry shell

Directions

    Heat oven to 350°.

    In large bowl, beat eggs until creamy and pale yellow in color, about 5 minutes.

    Beat in sugar, salt, corn syrup, butter and vanilla.

    Stir in coconut, oats and chocolate. Pour into pie shell.

    Bake 40 to 50 minutes until nutty brown. Cool on rack; refrigerate to chill before serving.
