Chocolate Orange Cake

  • 2 cups self-rising flour
  • 1/2 cup cocoa powder
  • 2 teaspoons baking powder
  • 1 cup granulated sugar
  • 10 ounces mandarin oranges in juice, drained, halved, juice reserved
  • 7 tablespoons canola oil

  • 3 1/2 tablespoons margarine
  • 3 1/2 ounces dark chocolate melted
  • 1 tablespoon powdered sugar
  • cocoa powder
  • chocolate curls

Directions

    Preheat oven to 325°F. Grease a 2 lb loaf pan.

    Sift together flour, cocoa powder, baking powder and sugar. Combine reserved mandarin orange juice with enough water to equal 1 cup then add to dry ingredients along with oil. Whisk until smooth. Pour 3/4 into prepared pan then arrange mandarin oranges over top. Cover with remaining batter. Bake for 50-60 mins, until firm to the touch. Let cool in pan.

    Meanwhile, for the icing, whisk margarine and chocolate together until light and fluffy. Add powdered sugar and beat until combined. Spread over top of cake. Decorate with chocolate curls and sift cocoa powder over top.
