- 6 None eggs, separated
- 1 1/2 cups sugar
- 2 cups flour
- 1 tbsp baking powder
- 12 tbsp (1 1/2 sticks) butter, melted and cooled
- 1 None orange, peel grated and orange juiced
- None None FOR THE ORANGE SYRUP
- 3/4 cup orange juice
- 2 tbsp rum or brandy (optional)
- 2 tbsp sugar
- None None FOR THE CHOCOLATE TOPPING
- 7 oz semi-sweet chocolate, chopped
- 1 tbsp strong black coffee
- 1/4 cup sour cream
Directions

1Preheat the oven to 350°F. Lightly grease and line bottom of a 9-inch springform pan with parchment paper.

2Beat egg yolks and sugar in a large bowl with an electric beater until pale and thick. Sift flour and baking powder into medium bowl. Fold into batter along with melted butter and orange peel and juice.

3Beat egg whites in a medium bowl with electric mixer until soft peaks form. Fold into batter. Pour into prepared pan.

4Bake for 50 mins until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool 5 mins on wire rack.

5Meanwhile, for the syrup, place orange juice, rum or brandy and sugar in a bowl. Stir briskly to dissolve sugar. Return cake to clean pan. Spoon syrup over warm cake. Let stand to cool completely. Transfer to a serving plate.

6For the chocolate topping, place chocolate and coffee in a heatproof bowl. Place over a pan of simmering water on low heat. Stir continuously until chocolate melts. Remove from heat and whisk in sour cream, until smooth and glossy. Cool for 5 mins before spreading over cake.
