Chocolate Orange Mud Cakes

  • 1 3/4 cups butter, chopped
  • 14 oz dark chocolate, chopped
  • 2/3 cup berry or apricot jam
  • 2 tsp instant coffee granules
  • 1 tsp vanilla bean paste
  • 1 None orange, zested
  • 3 tsp orange juice
  • 5 None eggs
  • 2 cups sugar
  • 1/2 cup self-rising flour, sifted
  • 3 tbsp cocoa, sifted, plus extra for dusting
  • None None Ganache
  • 1 cup heavy cream
  • 10.5 oz dark chocolate, chopped
  • None None Whipped cream or ice cream, to serve

Directions

    Preheat oven to 325°F. Grease and flour two 9 inch round cake pans.

    Place butter, chocolate, jam, coffee, vanilla bean paste, zest and juice in saucepan and warm over low heat, stirring until melted. Set aside to cool to room temperature.

    Whisk eggs and sugar together until pale and thick. Add cooled chocolate mixture and beat until combined. Fold in sifted flour and cocoa.

    Pour batter into pans and bake for 60 mins or until a skewer inserted in center comes out clean. Cool cakes on wire rack and dust with cocoa powder.

    Meanwhile, to make ganache, heat cream in a saucepan until it just reaches the boiling point, then pour cream over chopped chocolate in a mixing bowl. Leave to stand for 2 mins, then stir until combined and smooth. Pour ganache over cakes and allow to drip down the sides.

    Serve cakes with whipped cream or ice cream.
