  • 1/2 c. plus 1 Tbsp. butter (no substitutes), softened and divided
  • 1/4 c. packed brown sugar
  • 1 egg yolk
  • 1 tsp. vanilla extract
  • 1 c. all-purpose flour
  • 1 egg white, lightly beaten
  • 3/4 c. finely chopped pecans
  • 3/4 c. semi-sweet chocolate chips
  • 1 1/3 c. sugar
  • 3/4 c. margarine or butter, softened
  • 1 Tbsp. finely chopped mint leaves*
  • 1 egg
  • 2 c. all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 (10 oz.) pkg. mint chocolate chips

Directions

    Heat oven to 350°. Mix sugar, margarine, mint leaves and egg in large bowl. Stir in flour, baking soda and salt. Stir in chocolate chips. Drop dough by rounded tablespoonfuls about 2-inches apart onto ungreased cookie sheet. Bake 11 to 13 minutes or until golden brown. Cool slightly; remove from cookie sheet.
