Chocolate Raisin Rice Pudding

  • 4 Tbsp. raw rice
  • 2 c. milk
  • 1 tsp. salt
  • 2 Tbsp. butter
  • 1 tsp. vanilla
  • 1/2 c. whipped cream
  • 1/2 c. sugar
  • 1/4 c. Lowney's Always Ready chocolate powder or 2 sq. Lowney's premium chocolate
  • 3/4 c. seeded raisins
  • 2 egg whites, beaten

Directions

    Soak rice in milk 30 minutes.

    Add salt and cook in double boiler until rice is tender, about 25 to 30 minutes.

    Mix butter, sugar, chocolate, raisins and vanilla.

    Add cooked rice, cream and beaten whites.

    Fill buttered baking dish; cover with a meringue. Brown in moderate oven at 325° for 30 minutes and serve either hot or cold.
