Chocolate Raspberry Bars

  • 2 1/4 cups all-purpose flour
  • 1/2 cup cocoa powder + 2 tbsp
  • 2 cups granulated sugar
  • 1 1/4 cups desiccated coconut
  • 2 None eggs
  • 1 cup butter, melted + 1 tbsp
  • 1/2 cup raspberry jam
  • 1 cup powdered sugar

    Preheat oven to 325°F. Grease and line a 7 x 11 inch rimmed baking pan with parchment paper. Sift flour and 1/2 cup cocoa powder into a medium bowl. Add sugar and coconut. Add eggs and 1 cup butter and mix well. Transfer 1/2 mixture to prepared pan and press firmly into an even layer. Spread jam over top then place spoonfuls of remaining mixture evenly over jam. Smooth top and bake for 1 hour, or until just firm.

    To make the chocolate icing, sift powdered sugar and remaining cocoa powder into a medium bowl. Add remaining butter and 2 tbsp boiling water. Mix to a spreadable consistency. Spread icing over hot cake then allow to cool in tray before cutting into squares and serving.
