Chocolate Rum Cake

  • 1 pkg. yellow cake mix
  • 1 (4 oz.) pkg. instant chocolate pudding
  • 1 Tbsp. vanilla
  • 1 (8 oz.) sour cream
  • 4 eggs
  • 1 Tbsp. rum flavoring
  • 1/2 c. vegetable oil
  • 1 (6 oz.) pkg. mini chocolate chips, divided
  • 1 c. chopped pecans, divided
  • 1/2 c. sifted powdered sugar

    Combine cake mix, pudding mix, vanilla, sour cream, eggs, rum flavoring and oil in a large mixing bowl. Beat 3 minutes on medium speed. Add 1/2 cup chocolate chips and 1/2 cup chopped pecans. Beat 2 minutes longer. Fold in remaining chips and pecans. Batter will be very stiff. Pour into well-greased and floured 10-inch tube pan or Bundt pan. Bake at 350° for 1 hour or until toothpick comes out clean. Cool 30 minutes on wire rack before removing from pan. Turn out and cool completely. Sprinkle with powdered sugar.
