Ingredients

  • 2 1/4 c. flour
  • 1/4 c. unsweetened cocoa
  • 2 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 c. sugar
  • 1/2 c. margarine or butter
  • 3/4 c. applesauce
  • 4 eggs
  • 1 Tbsp. vanilla
  • 2 c. shredded zucchini
  • confectioners sugar (optional)

Directions

    In a medium bowl, mix together flour, cocoa, baking powder, baking soda, salt and cinnamon; set aside.

    In a large bowl, beat together sugar and margarine.

    Beat in applesauce, eggs and vanilla until thoroughly blended.

    Gradually add dry ingredients, mixing well.

    Stir in zucchini.

    Pour into a greased 9-cup Bundt pan. Bake in preheated 350° oven for 1 hour or until cake tester inserted near center comes out clean.

    Cool slightly and dust with confectioners sugar, if desired.
