Chorizo Farfalle

  • 400 g farfalle pasta
  • 2 tbsp olive oil
  • 150 g chorizo, sliced
  • 1 None courgette, quartered lengthways and sliced
  • 2 cloves garlic, peeled and crushed
  • 125 ml red wine
  • 350 g tub ready-made tomato and garlic pasta sauce
  • 100 ml whipping cream
  • 20 g pitted black olives, sliced

Directions

    Cook the pasta in boiling salted water according to the package instructions.

    Heat the oil in a separate saucepan and fry the chorizo, turning, until browned. Add the zucchini and garlic and cook for 1 min. Season with black pepper. Add the wine, pasta sauce, cream, olives and a pinch of sugar and bring to a boil. Simmer for 5 mins. Drain the pasta and toss with the sauce.
