  • 2 c. thinly sliced cucumbers
  • 2 c. chopped green pepper
  • 2 c. chopped cabbage
  • 2 c. sliced onion
  • 2 c. chopped green tomatoes
  • 1 1/2 c. salt
  • 2 qt. water
  • 2 c. fresh baby lima beans
  • 2 c. cut fresh green beans
  • 2 c. sliced carrots
  • 2 c. water
  • 1 qt. white vinegar (5% acidity)
  • 4 c. sugar
  • 2 c. water
  • 1/4 c. mustard seed
  • 2 Tbsp. celery seed
  • 1 Tbsp. plus 1 tsp. ground turmeric

    Combine cucumbers, green pepper, cabbage, onion and tomatoes in a large nonmetal container.

    Dissolve salt in 2 quarts water; pour over vegetables.

    Cover; let stand 8 to 10 hours.

    Drain well.

    Cook lima beans, green beans and carrots in 2 cups water for 20 minutes, or until crisp-tender; drain.

    Combine all vegetables and remaining ingredients in a Dutch oven; boil 10 minutes.
