Ingredients

  • 1 peck green tomatoes, chopped or ground
  • 1/2 peck ripe tomatoes, chopped
  • 6 onions
  • 2 lb. brown sugar
  • 1 Tbsp. celery seed
  • 1 Tbsp. mace
  • 3 small cabbage heads
  • 1 doz. green peppers, remove seeds
  • 1/2 c. grated horseradish
  • 1 Tbsp. ground black pepper
  • 1 Tbsp. mustard seed

Directions

    Chop all vegetables.

    Combine green tomatoes, ripe tomatoes, onions, cabbage and peppers.

    Sprinkle with salt and put in a coarse cotton bag.

    Hang up bag and let drain overnight.

    Squeeze the bag in the morning to remove any juice left.

    Put vegetables in a porcelain kettle with brown sugar, horseradish, black pepper, mustard seed, celery seed and mace.

    Cover with vinegar and boil until it turns clear.

    Seal in jars.
