Ingredients

  • 12 green sweet peppers
  • 12 red sweet peppers
  • 12 medium size onions
  • 4 qt. cabbage, chopped
  • 1/2 c. coarse salt
  • 7 c. sugar
  • 4 Tbsp. ground mustard
  • 4 Tbsp. mustard seed
  • 1 Tbsp. turmeric
  • 1 Tbsp. ground ginger
  • 3 Tbsp. celery seed
  • 2 Tbsp. whole mixed pickling spice
  • 2 qt. white house vinegar

Directions

    Chop peppers, onions, tomatoes and cabbage as fine as you like it.

    Mix in salt and let stand overnight.

    Drain.

    Mix vinegar, spices (tie pickling spice in cloth), and sugar and simmer for about 20 minutes.

    Add the chopped mixture and continue to simmer for another 25 minutes.

    Place mixture in hot jars and seal.
