Ingredients

  • 1 peck (12 1/2 lb.) green tomatoes
  • 8 large onions
  • 10 green bell peppers
  • 3 Tbsp. salt
  • 6 hot peppers
  • 1 qt. vinegar
  • 1 Tbsp. cinnamon
  • 1 Tbsp. allspice
  • 1/4 tsp. cloves
  • 3 Tbsp. dry mustard
  • 1 3/4 c. sugar
  • few bay leaves

Directions

    Chop tomatoes, onions and peppers together; cover with the salt and let stand overnight.

    Drain and add the hot peppers, which have been chopped, vinegar and spices.

    (Spices should be tied loosely in cheesecloth bag.)

    Add sugar.

    Allow to boil slowly until tender (about 15 minutes).
