  • 200 g glace cherries, mixed colours
  • 125 g butter
  • 75 g caster sugar
  • 75 g brown sugar
  • 2 eggs
  • 2 tablespoons golden syrup
  • 1 cup plain flour
  • 14 cup self-rising flour
  • 12 pinch salt
  • 12 teaspoon mixed spice
  • 14 teaspoon nutmeg
  • 75 g raisins
  • 125 g sultanas
  • 125 g currants
  • 30 g almonds, sliced
  • 2 tablespoons sherry wine

Directions

    Combine fruit and nuts in a large bowl with sherry, cover and stand overnight.

    Beat butter till soft, add sugars and beat till creamy.

    Add eggs, one at a time, while still beating, then add golden syrup.

    Add sifted flours and spices alternatively with fruit mixture and then mix till combined.

    Grease and line a 20cm round tin.

    Spread mixture evenly and bake for approximately 1 hour and 50 minutes in an oven set at 150C.
