  • 1 medium size Irish potato
  • 2 1/2 to 3 1/2 c. powdered sugar
  • 1 jar chunky peanut butter
  • waxed paper

    Peel potato.

    Boil until done.

    Mash while hot.

    Add powdered sugar, a little at a time, until you have a dough-like mixture. Roll out on waxed paper.

    Dough should be about 1/2-inch thick. Spread enough peanut butter to evenly cover dough.

    Roll up.

    Chill overnight.

    Slice into pieces.
