Ingredients
- 2 1/2 c. granulated sugar
- 1/2 c. light corn syrup
- 1/2 c. water
- 2 egg whites
- 1/2 c. smooth peanut butter
- 1/2 tsp. vanilla
- powdered sugar
Directions

1Butter a 2-quart saucepan.

2In the saucepan, combine sugar, syrup and water.

3Bring to a boil.

4Stir only until sugar is dissolved.

5Cook to hard ball stage (260°).

6Beat egg whites until stiff peaks form (tips stand straight).

7Gradually pour hot syrup over egg whites, beating constantly at high speed.

8Add vanilla and beat until candy holds its shape, 4 to 5 minutes.

9On towel dusted with powdered sugar, quickly pat or roll candy into a 16 x 16-inch rectangle and dust with additional powdered sugar.

10Spread with peanut butter and roll up using towel to help roll.

11Wrap in towel. Place on cookie sheet and chill until firm, about 1 hour.

12Makes 1 1/2 pounds.
