- 1 c. enriched all-purpose flour
- 1 tsp. salt
- 2 tsp. baking powder
- 8 oz. candied pineapple, chopped
- 8 oz. candied cherries, chopped
- 8 oz. pitted dates, chopped
- 4 1/2 to 5 c. nuts, chopped
- 1 c. sugar
- 4 eggs, separated
- 1 tsp. vanilla
- 2 Tbsp. butter or margarine
Directions

1Sift dry ingredients over fruit and nuts.

2Cream sugar with egg yolks, vanilla and butter.

3Fold in egg whites, which have been beaten until stiff, but not dry.

4Fold in fruit-nut mixture. Pour into greased and floured loaf tins, 2 to 4, depending upon size of tins.

5Bake at 275° for 1 1/4 hours.
