- 1 small green pepper
- 1 tablespoon butter
- 2 cups chicken broth
- 2 cups uncooked instant rice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Directions

1Chop, onion, celery, and peppers.

2Saute in butter over medium heat until crisp-tender, about 2 minutes.

4In a large pot, bring the chicken broth to a boil.

5Remove from heat, and quickly stir in the rice, seasonings, and sauteed vegetables.

6Cover and let stand for 7 minutes.
