- 2 eggs
- 1 egg yolk
- 1 cup fresh apple cider
- 1/3 cup brown sugar
- 1/3 cup sugar
- 4 cups all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. grated nutmeg
- 2 tbsp. melted butter
- Frying oil
- shortening
- Confectioners' sugar
Directions

1Beat together eggs and egg yolk in a large bowl.

2Gradually add cider and sugars.

3Sift together the dry ingredients and stir into egg mixture along with melted butter.

4Stir just enough to mix.

5Turn dough out onto work surface floured just enough so dough won't stick.

6When dough is patted to 1/2-inch thick, cut into doughnut shapes using a floured cutter.

7Let rest 5 minutes.

8Heat enough oil to fill the frying kettle 2 to 3 inches.

9Heat to 365F.

10Drop in doughnuts; when doughnuts float to top, turn them.

11Fry until golden brown on both sides (2 to 3 minutes).

12Drain on brown paper bag.

13When cool, dust with confectioners' sugar.
