Ingredients
- 3 Tbsp. flour
- 2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. dried thyme, crushed
- 2 lb. beef stew meat
- 3 Tbsp. cooking oil
- 2 c. apple cider
- 4 carrots, quartered
- 3 potatoes, peeled and quartered
- 2 onions, sliced
- 1 rib celery, sliced
- 1 apple, chopped
- 1/2 c. water
- 2 Tbsp. vinegar
Directions

1Combine flour, salt, pepper and thyme.

2Toss with meat to coat.

3In Dutch oven, brown meat in hot oil.

4Stir in cider, water and vinegar.

5Cook and stir to boiling.

6Reduce heat and simmer, covered, until meat is tender 1 1/2 to 2 hours.

7Add vegetables and apple.

8Cook until vegetables are tender, about 30 minutes.
