- 3 Large chicken breasts, cut into bit size pieces
- 1/8 cup olive oil
- 2 small cans sliced water chestnuts
- 1-3 fresh jalapenos, diced (depending on desired spiciness)
- 1/2 cup cilantro, chopped
- 1/2 cup green onion, chopped
- 1/4 cup lemon juice
- salt & pepper to taste
- 1 package instant yellow saffron rice
Directions

1Begin preparing yellow saffron rice, following package directions.

2Saute chicken, oil and jalapeno in a large frying pan or wok.

3When chicken is about 1/2 way cooked through, add lemon juice, onion and water chestnuts.

4Stir frequently as you allow most of the juices to cook away.

5Once chicken is totally cooked through, add cilantro, salt and pepper.

6Stir and allow to cook for 2 minutes.
