  • 3 cups fresh corn, cut from cob
  • 14 cup water
  • 14 cup fresh cilantro, chopped
  • 14 teaspoon salt
  • 14 teaspoon cumin seed
  • 18 teaspoon pepper
  • 1 medium tomatoes, peeled,seeded,and chopped

Directions

    Combine first six ingredients in a 2 qt baking dish; stir well.

    Cover with wax paper and microwave at high for 6-8 minutes.

    Stir in tomato, cover and microwave or high for 1-2 minutes or until corn is tender.
