Cinnamon-Apple Custard Pie

  • 1 unbaked pastry shell
  • 4 medium tart cooking apples, peeled and thinly sliced (about 2 3/4 c.)
  • 1 Tbsp. lemon juice
  • 1/2 c. sugar
  • 2 eggs
  • 1 1/4 c. half and half milk
  • 2 Tbsp. butter or margarine, melted
  • 1/4 tsp. ground nutmeg
  • 2 Tbsp. sugar
  • 1/2 tsp. cinnamon

Directions

    Sprinkle lemon juice over apples and toss lightly.

    Add the 1/2 cup sugar.

    Arrange in pie shell, cover with foil and bake 20 minutes in 400° oven.

    Remove foil.

    Beat eggs slightly, beat in cream, butter and nutmeg.

    Pour over apples.

    Bake another 10 minutes.

    Mix 2 tablespoons sugar and cinnamon.

    Sprinkle on top of pie.

    Bake 10 minutes longer or until crust is golden brown and custard is almost set.
