Cinnamon Cocoa Rice Pudding

  • 1 cup Small Grain White Rice
  • 6 ounces, weight Vanilla Instant Pudding
  • 3 cups Cold Milk, Or More As Directed On Instructions For Pudding
  • 1/4 cups Sweetened Cocoa Powder (I Use Hershey's Brand, Any Will Work)
  • 1-1/2 teaspoon Cinnamon, For Sprinkling

    To cook the rice, rinse rice in a strainer under cool water. Cook on the stove top in a pot with a lid according to instructions on package. Set aside to cool down.

    While the rice is cooking, in a large mixing bowl, prepare vanilla pudding with milk, following the instructions on the pudding box. Add sweetened cocoa powder and stir well. Add cooked rice and stir with a spatula to combine well.

    Transfer combined ingredients into dessert cups and sprinkle each with cinnamon. Cover with plastic wrap and refrigerate until ready to serve.
