- 50 grams butter
- 3/4 cup milk
- 2 eggs, beaten
- 2 1/4 cup AP Flour
- 4 tsp baking powder
- 1 tsp ground cinnamon
- 1 pinch salt
- 1/2 cup heaped brown sugar
- 6 tbsp white sugar for topping
Directions

1Pre-heat Oven to 200C.

2Grease a 12 hole muffin pan

3Melt butter in a saucepan and allow to cool.

4Thereafter add the milk and eggs and mix together

5Sift the flour, baking powder, cinnamon and salt in a large bowl.

6Stir in the brown sugar

7Pour the egg mixture into the dry ingredients and stir until only just combined.

8Mixture should still be slightly lumpy

9Spoon the mixture into the muffin pans and sprinkle with white sugar.

10(You may add more or less white sugar if you like.

11Once baked it gives the muffin a crispy topping which i just adore!)

12Bake for 15-18 minutes until golden brown.

13Leave in pan for 5 minutes then transfer to wire rack to cool completely
