   Mix cinnamon and applesauce until mixture forms a ball, adding more cinnamon, if necessary.

   Knead dough on a board dusted with cinnamon.

   Roll out to 1/4-inch thickness.

   Cut with cookie cutters.

   Peel away excess dough and reroll to use completely.
