- 3/4 cups All-purpose Flour
- 1/4 cups Cornstarch
- 1/2 teaspoons Baking Powder
- 1/4 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 15 ounces, weight Canned Sliced Peaches
- 2/3 cups Buttermilk
- 1/3 cups Melted Butter
- 1 whole Egg
- 1-1/2 teaspoon Cinnamon
- 3/4 teaspoons Vanilla Extract
Directions

1In a medium bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.

2Drain peaches, reserving 1/4 cup liquid. Mix buttermilk, melted butter, egg, sugar, cinnamon, vanilla and 1/4 cup peach juice until combined. Add to the dry ingredients.

3Dice sliced peaches into chunks. Pat dry with paper towels to prevent the waffles from getting soggy. Fold the peaches into the batter. Let sit for 30 minutes.

4Pour batter into preheated waffle iron. Cook for 4 to 5 minutes.
