Cinnamon-Raisin Coffee Cake

- 1 1/2 c. all-purpose flour
- 3/4 c. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1/4 c. shortening
- 1 large egg, lightly beaten
- 1/2 c. milk
- 1 tsp. vanilla extract
- 1/2 c. firmly packed brown sugar
- 2 Tbsp. all-purpose flour
- 2 tsp. ground cinnamon
- 1/2 c. raisins or chopped walnuts
- 2 Tbsp. butter or margarine, melted
Directions

1Combine first 4 ingredients; cut in shortening with a pastry blender until blended.

2Combine egg, milk and vanilla; add to flour mixture, stirring until blended.

3Set batter aside.

4Combine brown sugar, 2 tablespoons flour, cinnamon and raisins; stir in melted butter.

5Set brown sugar mixture aside.

6Spoon two-thirds of batter into a greased and floured 9-inch round cake pan; sprinkle with brown sugar mixture and top with remaining batter. Bake at 375° for 25 minutes or until golden.
