- 1/4 c. golden raisins
- 1 Tbsp. apple juice
- 1 1/2 c. chicken broth
- 1 cinnamon stick
- 1/2 c. lentils
- 1/2 c. brown rice
- 1 Tbsp. canola oil
- 2 tsp. grated orange zest
- 1/4 c. fresh orange juice
- 1/4 c. chopped fresh mint or lemon balm
Directions

1Combine the raisins with the apple juice.

2Set aside to plump. Place the broth and cinnamon stick in a heavy saucepan and bring to a boil.

3Stir in the lentils, rice, oil and raisins with the apple juice and return to a boil.

4Reduce the heat to low and cover tightly.

5Let the rice simmer, undisturbed, for about 45 minutes. Uncover the pan and toss the rice mix with the remaining ingredients.

6Adjust seasoning to taste.

7Garnish with a dollop of plain yogurt and pecans.
