  • 1 c. low-fat Ricotta or cottage cheese
  • 1 c. plus 2 Tbsp. chilled butter
  • pinch of salt
  • 1/4 tsp. vanilla
  • 2 c. flour
  • 1 tsp. baking powder
  • 3/4 c. raisins
  • 1/3 c. ground nuts (your choice)
  • 1 tsp. cinnamon
  • 1/3 c. sugar
  • 1 1/2 c. powdered sugar
  • 1/2 tsp. vanilla
  • 3 or 4 Tbsp. milk

    Drain cheese.

    Cut 1 cup, plus 1 tablespoon of butter into flakes.

    Add cheese, salt, vanilla, flour and baking powder.

    Knead on floured surface.

    Wrap in aluminum foil and chill 1 hour.

    Roll out to 16 x 24-inch rectangle.

    Melt 1 tablespoon butter; brush on dough.

    Wash the raisins in hot water.

    Mix ground nuts, cinnamon and sugar.

    Spread mix on dough, then add raisins.
