Ingredients

  • 1 large chicken, cooked and boned
  • salt and pepper
  • 1 c. shelled nuts (almonds, hazelnuts or walnuts or a mixture)
  • 1 c. fine dry white bread crumbs (optional)
  • 2 Tbsp. oil
  • 1 tsp. paprika
  • 2 c. chicken broth

Directions

    Grind nuts in blender.

    Heat broth; add nuts and bread crumbs. Bring to a boil and cook, stirring until mixture has thickened. Arrange chicken over a bed of rice.

    Pour nut sauce over chicken. Mix oil and paprika until it becomes red.

    Dribble over sauce to decorate.

    May be served cold.
