- 2 cups all-purpose flour
- 1/4 cup plus 2 tablespoons self-rising flour
- 4 large eggs, lightly beaten
- 1 1/2 cups sugar
- 2 teaspoons finely grated orange zest
- 2 sticks (1/2 pound) unsalted butter, softened
- 1/2 cup fresh orange juice
Directions

1Preheat the oven to 350.

2Lightly butter a 5-by-8-inch loaf pan.

3In a medium bowl, sift together the all-purpose and self-rising flours.

4In a large bowl, combine the eggs, sugar and orange zest.

5Add the butter and stir until combined.

6Add the orange juice.

7Stir in the dry ingredients and spoon into the prepared pan.

8Bake the citrus bread for about 1 1/4 hours, or until the top is golden and cracked and a few crumbs cling to a skewer inserted in the center; cover the loaf with foil halfway through baking.

9Let cool in the pan for 10 minutes, then transfer to a rack and let cool completely.
