- 2 zucchini sliced into ribbons
- 2 carrots peeled, sliced into ribbons
- 24 ounces cod fillets
- 4 slices Orange
- 4 slices lemon
- 4 tablespoons white wine
- 1 inch fresh ginger peeled, finely grated
- cilantro leaves fresh, to garnish
Directions

1Preheat oven to 375°F.

2Divide vegetables between 4 large squares of parchment paper. Top with cod fillets, orange slices, lemon slices, wine and ginger. Season. Fold into parcels. Transfer to a baking tray and bake for 25 mins, until fish flakes. Serve garnished with cilantro.
