- 1/4 c. low-sugar orange marmalade
- 1 Tbsp. prepared mustard
- 3/4 tsp. ground ginger
- 1/8 tsp. ground red pepper
- 4 (6 oz.) skinned chicken breast halves
- vegetable cooking spray
- 3 Tbsp. reduced-calorie margarine, softened
- 1/2 tsp. grated orange rind
- 1/4 tsp. ground ginger
Directions

1Combine first 4 ingredients in a small bowl, stirring well with a wire whisk.

2Brush half of marmalade mixture evenly over chicken breast halves.

3Coat grill rack with cooking spray.

4Place rack on grill over medium-hot coals.

5Place chicken on rack and cook 10 minutes on each side or until chicken is done, brushing frequently with remaining marmalade mixture.
