Citrus Rum Chicken

Ingredients

  • 4 chicken breasts
  • 14 red bell pepper
  • 14 green bell pepper
  • 12 white onion
  • 4 ounces Diet Coke
  • 3 slices lemons
  • 15 baby carrots
  • 1 (6 ounce) can pineapple chunks in juice
  • 2 dashes rum
  • 2 tablespoons honey (sugar-free)
  • 14 cup Splenda granular
  • 2 tablespoons brown sugar
  • 5 tablespoons light soy sauce

Directions

    Cut up veggies in small pieces, not carrots.

    Cut white onion in bite size pieces.

    Cut chicken up into 1 inch pieces.

    Place lemon slices on bottom of crock pot with carrots and onion and pineapple, lay chicken over that and add.

    Remaining ingredients in crock pot.

    Stir together, and let soak in fridge over night.

    Cook on low for up to 6 hours, or on high for 3 hrs (every crock pot is different).

    Enjoy with white rice or brown rice.
