- 2 quarts water
- 1 34 teaspoons salt
- 2 lbs red potatoes, cubed
- 1 large onion, chopped
- 14 cup butter or 14 cup margarine
- 1 large carrot, diced
- 2 (6 1/2 ounce) cans minced clams
- 1 (12 ounce) can evaporated milk
- 1 tablespoon dried parsley
- 34 teaspoon pepper
- 12 lb bacon, cooked and crumbled
Directions

1I large dutch oven bring water and salt to boil.

2Add potatoes; cook until tender.

3Do not drain.

4In a pan - saute onions in butter until tender.

5Add onions and carrots to potato mixture; heat through.

6Drain clams if desired.

7Stir clams, milk, parsley and pepper into potato mixture; heat through.

8Just before serving, stir in bacon.
