Clam Chowder (Microwave)

Ingredients

  • 2 slices of bacon diced
  • 1 medium onion chopped
  • 2 medium potatoes peeled and cubed
  • 2 cans (6 1/2 oz. ea.) minced clams
  • 1/4 flour
  • 1 pint on-fat half and half
  • 1/8 teas white pepper
  • 1/2 teas salt
  • 1/4 cup butter, melted

Directions

    In 3 quart micro proof casserole, cook bacon on high for 3 minutes.

    Stir in onion and potatoes and cook covered on 90 (saute) for 8 to 10 minutes until potatoes are cooked.

    In a 2 cup glass measuring cup melt butter on high for 1 min. Stir in flour and then add to potato onion mixture, mixing well.

    Stir in the rest of ingredients including clam juice .

    Cover and cook on high for 5 minutes until hot. Stir at least once during cooking.
