- 14 cup flour
- 12 teaspoon baking powder
- 14 teaspoon salt
- 18 teaspoon black pepper
- 1 tablespoon parsley, minced
- 8 tablespoons sour cream (optional)
- 6 12 ounces minced clams, drained (reserve liquid)
- 1 egg, beaten
- 2 cups Rice Chex
- oil, for frying
Directions

1In a medium bowl, combine flour, baking powder, salt, pepper, and parsley.

2Slowly stir in clam liquid until smooth.

3Add eggs and clams, mix well.

4Stir in cereal to coat.

5Let stand 10 minutes.

6Stir to combine.

7Heat oi to an 1/8- inch depth in skillet.

8Drop 1 heaping tablespoon of clam mixture into hot oil.

9Pat with a spoon to form 3- inch patty.

10Repeat to form 8 patties.

11Brown over medium heat.

12Turn and brown other side.

13Drain on paper towels.

14Serve immediately topped with sour cream.
