Clam Fritters

Ingredients

  • 1 pt. clams, chopped and drained*
  • 2 eggs
  • 1/3 c. milk
  • 1 1/3 c. flour
  • 2 tsp. baking powder
  • salt and pepper to taste

Directions

    Beat eggs until light; add milk.

    Stir in flour and baking powder, seasonings and clams.

    Drop by tablespoon into pan of fat heated to 375° or until 1-inch cube of bread browns in 1 minute. (Dip spoon in hot fat before using.) Fritters should be cooked through, browned on outside in 3 to 5 minutes.

    Drain on paper towel.

    Result, a light fluffy fritter.
