- 1 pt. clams, chopped and drained*
- 2 eggs
- 1/3 c. milk
- 1 1/3 c. flour
- 2 tsp. baking powder
- salt and pepper to taste
Directions

1Beat eggs until light; add milk.

2Stir in flour and baking powder, seasonings and clams.

3Drop by tablespoon into pan of fat heated to 375° or until 1-inch cube of bread browns in 1 minute. (Dip spoon in hot fat before using.) Fritters should be cooked through, browned on outside in 3 to 5 minutes.

4Drain on paper towel.

5Result, a light fluffy fritter.
