Clam-Vegetable Stuffing

  • 1 1/2 c. chopped, unpeeled zucchini
  • 3 c. bread cubes, toasted (4 slices bread)
  • 1 (6 1/2 oz.) can clams, drained or 1 (8 oz.) can oysters, drained and chopped
  • 1/3 c. chicken broth
  • 1/2 tsp. dried basil, crushed
  • 1 1/2 c. thinly sliced carrot
  • 1 1/2 c. sliced fresh mushrooms
  • 1 beaten egg
  • 1/4 tsp. ground sage

Directions

    Cook zucchini and carrot, covered, in boiling salted water 3 minutes or until crisp-tender.

    Drain.

    Toss with bread cubes, mushrooms and clams or oysters.

    Combine chicken broth, egg and herbs.

    Pour over stuffing mixture.

    Toss until moistened.

    For a moister stuffing, add more broth.

    Turn into a 2-quart casserole. Bake, covered, at 350° for 40 minutes or until stuffing is heated through.
