Clams On Toast

  • 1 (10 oz.) can chopped clams
  • 2 Tbsp. olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 Tbsp. parsley, minced
  • 1/4 tsp. red pepper
  • 4 tsp. flour
  • 4 slices good quality sandwich bread, crusts removed, each slice in two triangles and very lightly toasted

    Drain and reserve 1/3 cup of the liquid from the clams.

    Chop the clams more finely.
  3. 3
    Heat the oil in a skillet and saute the onion slowly until soft.
  4. 4
    Add the garlic, parsley and pepper. Cook for a couple of minutes, then stir in the flour.

    Add the reserved clam juice and the clams and heat until the mixture is thick enough to spread.

    Spread on toast and reheat quickly in a 400° oven when ready to serve.
