Clams With Prosciutto

- 2 tablespoons olive oil
- 1 tablespoon chopped garlic
- 18 to 1/4 pound prosciutto or other dry-cured ham, chopped
- 1/4 cup dry white wine
- 48 littleneck clams, cleaned (see chicken recipe)
- Chopped parsley for garnish
Directions

1Put the olive oil over medium heat in a large pot that can be covered.

2Add garlic and ham and stir.

3Add wine and clams.

4Cover and cook, shaking the pot occasionally, until the clams open, about 10 minutes.

5Sprinkle with parsley, and serve.
