Classic Chocolate Wafer Roll

  • 1 pt. whipping cream
  • 1 tsp. vanilla extract
  • 1 package package chocolate wafer cookies
  • chocolate shavings

    In a large mixing bowl, whip the cream with an electric mixer until soft peaks form.

    Add the vanilla and continue to whip until peaks are stiff.

    Spread 11/2 tsp.

    of the whipped cream onto each wafer.

    Stack them one on top of the other into about a 14-inch tower.

    Lay the stack carefully on its side on a serving platter to make a log.

    Frost with the remaining whipped cream and refrigerate at least 4 hours or overnight

    Before serving, garnish with chocolate shavings, if you like.

    Cut diagonally into slices; store any leftovers in the refrigerator.
